Chicken and beef broth come to mind. You will not get the same taste but if you don't want the alchohol then you have to give up the taste. However, it's always wise to remember that once heated, the actual alchohol will evaporate thus there is almost none in the dish. It's just a matter of taste and choice but there is actually no substitute for things like dry sherry, which imparts a richness to a dish that not even white wine can.
