But it is a good one, and one I used to use in my restaurant. Thought I'd pass it on (and if anyone can modify it, please let us know!). SOUR DOUGH PANCAKES (from your own starter mix) BASE (Starter): 2 1/2 cups flour 2 cups warm water Mix, place in a large bowl, and cover. Let it rise overnight. In the morning, take out 1 or 2 cups of the starter mix and refrigerate in a jar container for later use. Pancakes: To the remaining mix, add - 1 egg 2 tablespoons of oil 1/4 cup canned milk (evaporated milk) Sprinkle the egg, oil, milk mixture with - 1 teaspoon salt 1 teaspoon soda (or baking powder) 2 tablespoons of sugar Rest the pancake mix for 15 or 20 minutes before using.
