: For oven-fried chicken, I use a 375 degree oven.

: I put about 2-3 tablespoons of Extra-Virgin Olive Oil in a baking pan.
: Just toss some flour with seasoned salt in a bowl with a tight cover. Shake your pieces of chicken in the flour mixture and place in the olive oil. Bake for about 30 minutes and then turn.

Try this one for variety:

oven at 400 degrees F
Lightly grease a cookie pan with shallow rims.

1 long tube saltine crackers, very finely crushed
1/2 t onion powder
other spices to taste)try marjoram, oregano, rosemary and/or hot pepper
a couple eggs
Chicken pieces with skin on

Mix the crushed crackers with the onion powder, and other spices(if desired). Place in a large zip-lock bag. Set aside. Beat the eggs in a large bowl. Set aside. Wash and dry the chicken pieces well. Dip the chicken pieces, one by one in egg then toss them in the bag of crushed saltines/spices. Holding the bag closed, shake well to coat each chicken piece. Place each piece skin side down on the greased cookie pan. Bake in the pre-heated oven for 30 minutes, then turn over and bake another 30 minutes, or until done. Good hot or cold.
