Hi Jacquie,
Here's a couple of seasoning blends for you to look at. After you pick one that looks good to you, just add about 1/2 teaspoon per pound of ground chicken, adjust the salt level if needed. Then mix for about 5 minutes (easiest if you use your hands), until it gets sticky. Then stuff it into casings or make patties.

CAJUN SEASONING

2 tbsp. garlic powder
2 tbsp. cayenne
2 tbsp. black pepper
2 tbsp. dried sweet basil leaves
1 tbsp. salt (optional)
1 tbsp. dried oregano leaves
1 tbsp. white pepper
1 tbsp. onion powder

Combine all ingredients and store in a tightly sealed container. Makes about 3/4 cup of seasoning.

CAJUN-STYLE SEASONING MIX

2 tbsp. paprika
1 1/2 tsp. each dried oregano and dried thyme
1 tsp. each onion powder and black pepper
1 tsp. each garlic powder and salt
1/2 tsp. cayenne pepper, or to taste

Mix until well combined. Sprinkle approximately 1/2 teaspoon spice mixture over each portion of fish or shellfish before broiling. Save remainder in an airtight container for future use. Makes about 1/4 cup.

K'S CAJUN SEASONING

1 (26 oz.) box salt or lite salt
3 tbsp. black pepper
2 tbsp. garlic powder
1 tsp. onion powder
1 tsp. nutmeg
2 tbsp. Accent (optional)
2 tbsp. dried parsley flakes
4 tbsp. red pepper (cayenne)
2 tbsp. chili powder

Once you start using it, you'll never be without it! Mix all ingredients in a large bowl. Fill a shaker for daily use; store remainder in tightly covered container.

CAJUN SPICE

3 tbsp. paprika
1/2 tsp. red pepper (cayenne)
1 tbsp. garlic powder
2 tsp. oregano
2 tsp. thyme
1/2 tsp. salt
1/2 tsp. white pepper
1/2 tsp. cumin
1/4 tsp. nutmeg

Mix altogether and store in small spice jar.

CAJUN SEASONING

2 tbsp. garlic powder
2 tbsp. ground red pepper
2 tbsp. black pepper
2 tbsp. dried sweet basil
1 tbsp. salt (optional)
1 tbsp. dried oregano
1 tbsp. ground white pepper
1 tbsp. onion powder

Combine all ingredients and store in a tightly sealed container. Makes 3/4 cup seasoning. Add's a touch of Louisiana to anything.

CAJUN SPICE

2 part ground sweet paprika
1 part garlic powder
1 part onion powder
1 part ground white pepper
1 part freshly ground pepper
1 part cayenne pepper
1 part leaf thyme (crushed in palms of hand)
1 part basil, crushed
1 1/2 parts salt

Blend thoroughly. Store in a clean jar or shaker as for any spice. Good on charcoal or mesquite fish, pork, beef or chicken. Delicious sprinkled on cheese toast or stir-fried vegetables. Using teaspoon measuring parts, double recipe fills 4 ounce jar or shaker.
