This is a delicious dessert.
Brazilian Style Caramel Pudding
Ingredients
1 cup sugar for caramel
1 can sweetened condensed milk
equal ammount of regular milk (use the can to measure)
3 eggs
1 8-inch ring mold
Put the sugar in the ring mold and place it directly over medium heat.
With an wooden spoon and being very careful not to burn yourself (the caramel
gets VERY HOT and so does the ring mold) or the sugar, mix the sugar
around until it is completely melted and golden brown in color. Spoon it
up the sides of the mold. Let cool.
Combine the condensed milk, regular milk and eggs in blender. Whip until
smooth. Pout this mixture into the mold and place it in center of a cookie
sheet. Add about an inch of water ot the cookie sheet.
Bake the pudding for about one hour in 325 oven. It will turn golden brown
on top and start separating from the sides of the mold. Let it cool to room temperature and place in refrigerator, preferably overnight(at least 6 hrs)
Just before serving, run the tip of a knife around the inside of the mold.
Place a deep platter over the mold and invert. The pudding should slide out easily. If not, give the mold a firm but careful shake. Spoon the caramel
sauce on top and serve. Enjoy.
For variation, you can substitute the regular milk for one can of fresh orange
juice.
