BJ - It's really that easy. Empanadas are merely pie crust that's filled, as in a turn over. I've even used store bought pie crust, but don't tell anyone. :)

Cut out 4 or 6 inch circles, put the filling in the center, fold over, and bake until nicely brown on top. When I do have time, and really want extra special ones, I'll use a richer pie crust. You can also decorate them, if you're of a mind to do so. Just use some extra crust and cut it into tiny circles and cut out eyes & mouth to make mini Jack-O-Lanterns or don't decorate them. It's faster that way.

If you want to make savory empanadas, then use a non-sweet pie crust and fill with taco meat. That's fast and easy, or you can make an authentic shredded pork, beef or chicken filling the same as you'd use for enchiladas or tacos. Just don't let it be too runny, 'cause your dough will get soggy.
