3oz butter
3oz / 3/4 cup grated cheese
4oz / 1 cup plain flour
1 teaspoon paprika
good pinch of cayenne pepper

Preheat the oven to 350. Cream the butter until light, then beat in the grated cheese.

Sift the flour and blend into the creamed butter mixture to make a dough. Divide dough into balls, wrap each in plastic wrap and chill until firm enough to roll. Roll out the dough between two sheets of plastic wrap, dusted with a little flour. This makes the rolling of very short mixtures such as this, much easier, particularly in the hot weather.

Roll the dough to 1/8 inch thick and cut into 4inch lengths, each 1/2 inch wide. Place the cheese sticks on to baking trays and turn each end twice to give each stick two twists. Mix the paprika with the cayenne and, using a dry brush, dab the paprika on to the twists. Bake 10 minutes.

Makes about 80.
