RED POTATO SALAD

3 lb. red potatoes
1/4 c. tarragon vinegar
2 to 3 Tbsp. sugar
1/4 tsp. paprika
salt and pepper
1/3 c. chopped green pepper
1/4 c. grated onion or 1/8 c.
chopped chives
1 tsp. celery seed
snipped fresh parsley
1/2 c. sour cream
1/2 c. mayonnaise

Slice potatoes into bite-size chunks. Cook until soft,
but not mushy. Combine vinegar, sugar, paprika, salt and
pepper. Marinate warm potatoes for 45 minutes. Mix in pepper,
onion or chives and celery seed. Mix sour cream and mayon-
naise, mix into potatoes. Chill. Garnish with parsley and
paprika.
