Here's a Squash Casserole from the Best of Southern Living:
2 cups cooked squash
3/4 stick margarine
2 eggs
1 teaspoon salt
1/2 teaspoon pepper
1 cup grated onion
1 cup shredded cheese
1 cup evaporated milk, undiluted
2 cups Ritz cracker crumbs
Mash cooked squash. Add other ingredients and mix well. Pour into a greased 1 quart casserole and bake at 375 degrees for about 40 minutes. Yield: 6 servings If you like a lot of cheese, like my family, I always add extra.
