Looking for a salad that has corn, red bell peppers, onion etc. with a vinegar dressing. We are going to a potluck and it has to travel at least 1 1/2 hours in the car, although I plan on putting it in a cooler.

I don't want one with a mayonaisse base because of the heat out here and the traveling distance.
