Beef Barley Soup
2 to 3 small beef marrow bones 1 to 2lbs. chuck steak (or lean stew meat) 1/2 pkg. pearl barley 1/2 pkg. dried green split peas 1/2 pkg. dried baby lima beans 3 1/2 potatoes plus 1/2 potato grated 5 carrots 4 stalks celery (sliced) 1 cooking onion (chopped) 3 cloves garlic (chopped) dash of salt, pepper, celery salt, basil, parsley, marjoram, oregano, rosemary, thyme 1 tsp. sugar (be creative with the seasonings-season to taste
Put vegetables, meat, bones in large pot and fill æ full with water. Boil 10 minutes and remove bubbly stuff. Add barley, peas, beans, and seasoning. Reduce heat to 3 or 4 stirring often.
Add liquid as needed (I add 1 can healthy request chicken broth after apprx. 1 hour). Total cooking time is approx. 4 hours.
I add 10 oz. of dry pasta (I like rotini) 1 hour before soup is ready.
