Needed:
4 chicken breasts
Broken Tortilla chips
10 cloves garlic chopped
1/2 bunch cilantro
Lime Juice
Cayene Pepper (optional)
Washed Spinach Raw, destemed
Salsa
one large tomato chopped,
1 avocado, chopped,
1 medium onion, chopped,
1/2 bunch cilantro chopped fine
Juice 1 lime
1 tsp red pepper
1 JalapeŇo Pepper chopped fine or 1/2 can chopped chiles,

Rub chicken with chopped Garlic
In refridgerator, Maranate chicken breasts in lime juice for two hours. Crush Tortilla chips into very tiny pieces and mix with 6 finely chopped Garlic Cloves and 1/2 bunch finely chopped cilantro. Press Chicken into chips so chips stick to breasts. Sprinkle with Cayene pepper (optional) Heat 1/2 cup Olive oil in medium to large saucepan. Fry chicken breasts in oil.
On plate, make a bed of spinach leaves.
Place chicken off center in bed of spinach ofset by Salsa. Serve
note: I sometime cut the lime juice marinade 2 to 1 with tequila
