Zucchini Salad

1/2 package onion soup mix
1/2 cup wine vinegar
2/3 cider vinegar
3/4 cup sugar
1 teaspoon salt
1 teaspoon ground black pepper
1/3 cup vegetable oil
1/2 cup green pepper, chopped
1/2 cup celery, chopped
7 small zucchini, thinly sliced
Mix onion soup mix with wine vinegar to reconstitute onions. Add other vinegar, sugar, salt, pepper oil and mix to combine. Add green pepper, celery and zucchini and stir gently. Store refrigerator 4 to 6 hours prior to serving. To serve use slotted spoon to scoop up veggies, serve as is or on torn lettuce pieces. Makes around 8 servings.

Note: replacing red bell pepper for green is very pretty. I use only cider vinegar if I'm out of wine vinegar.
