This is for the authenic Greek Spinach Pie I've had versions that used a different cheese but the amount of cheese was about the same. Spanakopeta-Spinach Cheese Pie 3 pounds frsh spinach 2 bunches greeen onions, finely chopped 1/2 cup minced parsley 1/2 teaspoon dill 1 pound crumbled feta cheese 8 egg, lightly beaten salt 1 cup olive oil 1/2 pound filo dough pastry leaves 1 cup melted butter To prepare the spinach: wash, cut off the stems, dry completely with paper towels, and chop. Saute the green onions in 1/2 cup olive oil under tender. Combine spinach, parsley, dill, beaten eggs and cheese; add cooked green onions; season with salt lightly and mix well. Mix 1/2 cup olive oil with the melted butter. Grease a 13 x 9-inch baking pan and line with 5 of the filo sheets, brushing each sheet with the melted butter mix. Spread the spinach mixture over the filo, and top with remaining sheets of filo, brushing each again with the butter mix (Each individual sheet of filo should be brushed with butter-oil mix). Bake at 350 for 45 minutes. Cool and cut into square (for best results cut through the filo with a razor blade). This may be served hot or cold, as an appetizer in small squares or as a vegetable side dish. Be sure to store leftovers in fridge.
