Chicken Tetrazini is tried and true. Also King Ranch Casserole would be good since you've already got wings. 7 layer dip is another really good and easy one. Tortilla rollups are good and pretty. I posted a rice, corn and black bean salad that's absolutely great, and makes tons. Easy as cooking rice and measuring. It's also colorful and pretty. And if you want it more substantial, add in the cubed ham or smoked turkey chunks.

Black Bean, Corn & Rice Salad

Amount Measure Ingredient -- Preparation Method

1 can *black beans, well rinsed and -- drained
1 can white corn (or more if desired) -- drained
1/2 cup uncooked white rice -- cooked
1 large sweet onion (1015's are best) -- chopped fine
3/4 cup red bell pepper (can sub. green) -- chopped fine
2 Tablespoons jalapeno pepper (or to taste) -- chopped fine
use chopped, mild chiles for church dinner
1/2 cup fresh cilantro -- chopped
1/3 cup olive oil
1/4 cup lemon juice -- scant
3 Tablespoons red wine vinegar
1 1/2 teaspoons ground cumin
to taste garlic salt
to taste pepper

1. Put beans, corn and rice in a bowl. Add onion, pepper, jalapeno, pepper and cilantro.

2. Mix dressing ingredients together. Add to salad and mix well. Adjust seasonings to taste. Sometimes I add more lemon juice or vinegar, cumin, salt and pepper, etc.

3. Let sit for a few hours for flavors to blend. If you want to serve 6 people, increase the raw rice to 1 cup and make a bit more dressing.

* The preferred brand is Goya, as the beans are smaller and much prettier.

3 med. ripe avocados; peeled, pitted -- and mashed
2 Tb. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 cup sour cream
1/2 cup Miracle Whip salad dressing (or mayo)
1 pkg. taco seasoning mix (2 Alarm is best)
2 cans bean dip (10-1/2 oz.)
1 lg. bunch green onions, tops included -- chopped
3 tomatoes, cored & coarsely chopped
2 cans pitted ripe olives (3-1/2 oz.) drained & c
1 pkg. shredded, sharp cheddar cheese (8oz.)
Tortilla Chips


Combine mashed avocados with lemon juice, salt and pepper. Combine sour
cream, Miracle Whip and taco seasoning in a separate bowl. Layer as follows
in a large shallow dish: bean dip, avocado mixture, sour cream-taco seasoning
mixture, tomatoes and green onions, chopped olives, and shredded cheese.
Serve at room temp. *You can use canned guacamole dip for the avocado mixture.

Variations: add a shredded lettuce layer and/or 1-1/2 pounds cooked ground
meat. Put into a 350-deg. oven for about 6 minutes to melt the cheese and
heat. Serve hot
