Hot Milk Sponge Cake

4 eggs
2 c sugar (or a little less)
2 1/4 c flour
2 1/4 tsp baking powder
1 tsp vanilla
1 1/4 c milk
10 Tbsp. butter or margarine -- I use butter

Heat milk and butter until butter just melts. Beat eggs on high until thick, about 5 min. Gradually beat in sugar a little at a time, so it doesn't collapse the eggs. Turn to low speed and add baking powder, then flour, then vanilla. Add butter mixture beating until combined. Do not over beat cake, overbeating toughens the cake. Pour into greased and floured 9 x 13 pan or 2 layer cake pans. Bake in preheated oven 350 deg. for 30-35 min. or until done. I usually make these in layers and freeze the extra, to serve in berry season.

NOTES : This is a great cake for serving with fresh sliced and sugared stawberries and whipped cream.
