I make a lot of pizza's and I like the pizza dough that we have been making over the past few years. I am however always looking for other approaches. here is my present recipe:

Dry Stuff:

Into a mixing bowl add:
3 cups of regular all purpose flour
1/4 cup of whole wheat flour
1/4 cup corn meal
salt to taste
anaise seed to taste
sometimes a few chilli pepper seeds to taste

Not dry stuff:
up to 1/4 cup of oil
1 cup of warm water in which you have already added 1 tablespoon of yeast and i table spoon of sugar and let get frothy before emptying into the dry stuff.

You will have to add more water. I have a very good mixer and I simply add water until the pizza dough becomes a single spongy mass that does not stick to my finger when I touch it. If it does stick I simply add a bit of flour. I kneed this dough by hand for a few minutes and then coat it with oil and let it rise for about an hour before using. There is the present recipe.
