This is a very good and creamy tomato soup. I like this with a nice spinich salad. It makes a lot of soup so I usually only make half.
1 quart tomatoe juice
1/4 cup of butter
1/2 teaspoon salt
1/2 cup flour
1/2 teaspoon baking soda
6 cups milk
1 small onion, finley chopped
1/4 teaspoon black and red pepper
1 seeded tomatoe, chopped fine
Melt butter, saute the onions add the flour, stirring mix together tomatoe juice ,soda, salt, pepper, and 1/2 cup of water. While stirring the flour mix add the juice mix and stir until smooth. Boil this mix for 5 min. Next, scald the milk, do not boil, add this in a very thin stream to the juice mix, whipping with a wisk to prevent curdling. When all milk is incorporated it is ready to serve. In the summer when I have fresh basil I like to add that at the end for a beautiful flavor.
