Mary,
I hope this is the version you had. There seem to be some variations out there.
Cake:
3 eggs, beaten until fluffy
1 c. sugar
2/3 c. pumpkin
1 t. lemon juice
3/4 c. flour
1 t. baking powder
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1/2 t. salt
Filling:
1 c. powdered sugar
8 oz. cream cheese
6 T. butter
1 t. vanilla
Beat eggs until thick and fluffy. Add sugar, pumpkin, and lemon juice. Sift other ingredients and mix. Spread batter in jelly-roll pan that has been greased and floured. Bake at 375 for 15 minutes. Turn cake out onto a towel that has been sprinkled with powdered sugar. Roll towel and cake together; let cool. Meanwhile, beat all filling ingredients together until smooth. When cake
is cool, unroll and spread with filling. Roll up and refrigerate. Chill for 1 to 2 hours.
I hope this helped. We love this recipe, too. Especially at Thanksgiving and Christmas. Enjoy!!
Tammy
