Here is a recipe from the winery next door. It was adapted from the
Woman's Day Collector Cookbook. It's very good.
Fresh Tomato Wine Soup
2 cups peeled and chopped ripe fresh tomatoes
1/4 cup butter
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon each, ground nutmeg and basil
pinch of pepper
1/4 teaspoon baking soda
1 cup half-and-half or light cream
1/2 cup dry red table wine
In saucepan, simmer tomatoes in butter for 5 minutes. Whirl in blender
or press through strainer to puree. Return puree to saucepan.
Blend in flour, salt, nutmeg, basil and pepper. Stirring constantly,
bring mixture to a boil; reduce heat and simmer 2 minutes, stirring,
until very slightly thickened. Stir in wine; heat to simmering.
Makes 4 servings.
