A good change for a side dish: Vegetable Dish 1 pkg. of mixed vegetables of your choice 1 sleeve of Ritz crackers 1 stick oleo melted 1/2 cup mayonaise 1/2 pound of Velvetta cheese 1 small onion, chopped Mix onion with mixed vegetables, stir in mayonnaise to coat vetetables well. Cube the velvetta cheese and stir in. Crush the package of Ritz Crackers and mix them with 1 stick of melted oleo. Spread the crackers on top of the vegetables. Bake at 350 degrees until the cheese is bubbly and the crackers are a nice golden brown. You can use any combination of vegetables. I generally use the vegetables that include broccoli, potatoes, carrots, peas etc., but any combination will work.
