: While in Canada a couple of years ago we visited the town of Niagara on the Lakes I think it was called. We went into a bakery there and bought some shortbread that would melt in your mouth. It was sort of puffy as I recall. Can anyone share a recipe for a mouth watering shortbread with me. Betsy Title: SCOTCH SHORTBREAD Categories: Cookies Yield: 1 batch 4 c Flour 1 c Butter 1 c Sugar 1 Egg Cream butter and sugar, blend flour with them. Add whole egg and mix well. Knead this on a board until smooth and with the palm of hand at the edge, press flat with the knuckles or finger tips of other hand.
