Hi Sandy, I ran across these recipes for Broccoli Spaghetti today - I hope one of them is 'it'. Betsy Spaghetti-Broccoli Casserole 1 (8 oz.) pkg. spaghetti, cooked 6 green onions, chopped 2 pkgs. chopped frozen broccoli, thawed 4 tbsp. margarine, melted 1/2 tsp. salt, pepper and a dash of savory 8 oz. American cheese, grated 1/2 c. milk Mix all together and bake in a 375 degree oven about 30-40 minutes. This is good as a side dish with fish, meat or fowl. May be mixed ahead and cooked at the last minute. Spaghetti with Broccoli Sauce
1 to 1 1/2 lbs. spaghetti Boiling salted water 1 (10 oz.) pkg. frozen broccoli spears CHEESE SAUCE: 2 egg yolks 1 c. grated Cheddar cheese 1/4 c. grated Parmesan cheese 1 1/4 c. sour cream Dash of nutmeg or paprika 1. Cook spaghetti and broccoli separately in boiling salted water according to package directions. Drain. Keep warm. 2. Meanwhile, prepare sauce: Beat egg yolks, cheeses, and sour cream together in a bowl. Pour into saucepan. 3. Slowly heat sauce, stirring constantly until smooth and creamy. 4. Add broccoli spears. Season with nutmeg or paprika. 5. Serve spaghetti in large bowl. Pour sauce over spaghetti and sprinkle with a little more nutmeg or paprika for looks. Serves 4.
