SPAGHETTI BIANCA
1 lb. thin spaghetti
6 tbsp. margarine
4 tbsp. olive or salad oil
3 cloves garlic, minced
5 tbsp. parsley, finely chopped
2 c. evaporated milk
1/2 tsp. oregano
1/4 tsp. rosemary
2 tsp. salt
1 tsp. pepper
1-1/2 c. grated Parmesan cheese
Cook spaghetti in rapidly boiling water until done. Drain. Melt margarine in a large saucepan and add oil. When these are hot, add garlic. Cook over low heat, but don't let garlic burn. Add parsley, evaporated milk, oregano, rosemary, salt and pepper. Continue to cook over low heat. Add drained spaghetti and cheese, a little at a time, stirring it well into the mixture, keeping heat low. When all the cheese has been used, remove to a large hot platter and serve with additional grated cheese on the side. Serves 4.
