If you have ripe and/or over-ripe bananas, you can peeland mash them (in a blender is ok), stir in 1 tsp. lemon juice for each banana and freeze in air tight containers for up to 6 months. Defrost in fridge and use the pureee in breads, cakes, puddings, etc. You can also freeze bananas in their peels, wrapped airtight, for up to 6 months. If the banana wasn't over-ripe when you froze it, it can be peeled and sliced into a salad while it is still slightly frozen..add at the last minute so it won't discolor...or eat the banana frozen like a popsicle. You can also freeze bananas slices (dip in orange juice first)on a baking sheet until hard, then store in freezer bags to have on hand for snacks. For an extra treat, dip the banana slices in melted chocolate after freezing and let the chocolate harden before transferring them to the plastic bag.
