Hi,

I found this recipe for "Chili Marinade" in the James McNair "Grill Cookbook". It's for chicken, pork or beef. I hope it's what you're looking for.

Chili Marinade

1 Tblsp. chili powder, preferably from ancho or pasilla peppers
1Tblsp minced shallot or red onion
2 tsp. minced or pressed garlic
1/4 Cup chopped fresh cilantro (coriander)
2 Tblsp chopped fresh oregano, or 2 tsp crumbled dried oregano
1 tsp ground cumin
1/4 Cup fresh lime or lemon juice
1/4 fruity olive oil, preferably extra virgin.
Salt
Freshly ground black pepper
Ground cayenne pepper
(last 3 ingredients to taste)

In a small nonreactive bowl, combine all ingredients; blend well. Use as a marinade for chicken kabobs.
