I think you could adapt it for a pot luck, make it up then spoon over rice, and keep warm. maybe use boneless pork steaks and cut up into pieces after they have been baked. * Exported from MasterCook * MEXICANA PORK CHOPS Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Main Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 pork chops -- or pork steaks or country ribs 1/3 c. chopped onion 1 can cream of chicken soup 1/2 pkg. taco seasoning (1 1/2Tbsp) Trim all excess fat from pork chops. Saute onions in a large frying pan; remove and set aside. Brown pork chops in frying pan, placing in a casserole dish when browned. Stir 1/2 c. water into drippings in pan, stir in undiluted soup, taco seasoning and onions. Pour soup mixture over pork chops in casserole dish. Bake uncovered in a preheated oven 350 deg. for 1 hr.
