Try a brocolli salad: 1 bunch of brocolli cut up in little pieces. I take the outer part of the stalk and discard it and chop only the inside and flowerettes. 5 slices bacon cooked and crumbled. 1 small bermuda onion, chopped 1/2 cup raisins. Dressing: 1 cup mayo(I use low fat) 1/4 cup apple cider vinegar 2 tbsp sugar Blend it well and add to brocolli, bacon, onion and raisins. Sometimes for variety and more color I add a shaved carrot. This is delicious. Enjoy. You can increase or decrease the ingredients depending on the ammount of brocolli you use. |
