Here's a great broccoli casserole!
2 (10 oz.) pkgs frozen chopped broccoli (have about a half a cup left over)
1 can cream of mushroom soup, undiluted
1 1/2 cups sharp cheddar cheese, grated
1 egg beaten
1/4 cup mayo
1/4 cup milk (can be skim or 1%)
2 Tbsp melted marg.
1/4 cup Ritz cracker crumbs
Cook broccoli according to pkg. directions and drain., Combine soup, cheese, eggs, milk and mayo. Stir into 2 quart greased casserole dish. Cover with
crumbs and drizzle margarine over. Bake 350 degrees 45 minutes.
(Have never tried this with fresh broccoli, but you could probably adjust the
recipe.)
