Here are some meatloaf recipes I have collected from magazines over the last fifteen years. I haven't tried them all, so I can't give recommendations.

African Meat Loaf

2 Medium Onions -- Chopped
1 Large Apple -- Firm, peeled & diced
2 Tbsp Margarine
2 Tbsp Sherry
2 Tsp Curry Powder
1 Cup Fine Dry Bread Crumbs -- Made from toast
1/2 Cup Milk
2 Lb Ground Beef
2 Tsp Salt
1/4 Tsp Pepper
2 Eggs
2 Tbsp Fruit Preserves
Apricot -- Pineapple or Orange
1/2 Cup Finely Chopped Peanuts
8 Oz Tomato Sauce
Saute onion and apple in margarine until golden. Remove from heat and stir in sherry and curry powder. Mix crumbs and mix. Stir in next 4 ingredients and curry mixture. Add all but tomato sauce. Mix lightly, put in loaf pan.
Bake in a 350ƒF oven 45 min. Put sauce on top and cook 15 min. more.
Let stand 15 min. before serving

Crunchy Meat Loaves

2 Eggs
1/4 Cup Bread Crumbs
8 Oz Water Chestnuts
- Drained, finely chopped (1 can)
1 Tsp Salt
1/8 Tsp Pepper
1/4 Tsp Garlic Salt
1 Lb Ground Beef Round
1/2 Lb Ground Pork
1 Cup Chicken Broth
1 Tbsp Cornstarch
1 Tbsp Brown Sugar
2 Tbsp Soy Sauce
2 Tbsp Chopped Green Onion
11 Oz Mandarin Oranges
- Drained (optional) (1 can)
1 Tbsp Toasted Sesame Seeds
Oven 375.
Beat eggs until frothy in a medium size bowl with bread crumbs, water chestnuts, salt, pepper, and garlic salt. Add ground meats; mix well. Form into 6 oval shaped loaves. Place loaves in a 13x9x2 inch pan.
Bake in moderate oven (375) for 20 minutes.
While loaves are baking, stir chicken broth into cornstarch in a small saucepan. Add brown sugar, soy sauce, and green onion. Cook, stirring constantly, until slightly thickened. Add mandarin oranges.
Remove pan of meat loaves from oven after 20 minutes baking. Spoon sauce over partially cooked meat loaves in pan. Return to oven. Continue baking another 10 minutes.
At serving time, arrange loaves on deep platter; sprinkle with sesame seeds. Nice with a packaged rice pilaf and an angel food cake topped with cocoa whipped cream.

Finlandia Meat Loaf

1 Med Onion -- Chopped
1 Tbsp Butter
1 Lb Ground Veal
1 Lb Ground Pork
1 1/2 Cups Soft Bread Crumbs -- (3 Slices of Bread)
1 Egg
1 Tbsp Parsley -- Chopped
1 Tsp Salt
1/2 Tsp Fennel Seed -- Crushed
1/4 Tsp Pepper
12 Dried Apricot Halves
6 Dried Pitted Prunes
Paprika
1 Envelope Chicken Gravy Mix
Saute onions in butter until soft. Combine all but fruit, blend well. Pour boiling water over fruit in a small bowl, let stand for 1 min. drain. Pat meat to 16x10 on waxed paper. Sprinkle with paprika. Place 6 of the apricots in a line in the short end of the meat top with prune and then the other apricots. Roll up meat tightly, jelly-roll fashion. Place in a greased baking pan.
Bake in a 375ƒF oven 1 hour.
Prepare gravy mix and serve.

Italian Meat Loaf

2/3 Cup Soft Bread Crumbs
1/4 Cup Red Wine
1 1/2 Lb Ground Beef
1/3 Cup Minced Onion
1/4 Cup Minced Parsley
4 Tbsp Grated Parmesan Cheese -- Divided
1 Egg -- Beaten
1 Clove Garlic -- Crushed
1 1/2 Tsp Oregano
1 Tsp Salt
1/4 Tsp Pepper
Mix crumbs and wine, let stand 5 min. Add rest of ingredients mix well. Put in a loaf pan. Sprinkle with cheese.
Bake in a 350ƒF oven 50 min.

Meat Balls With Lemon Gravy (Veal)

1 Lb Ground Veal
1 Cup Milk
1 Cup Soft Bread Crumbs -- Stale
1/2 Lemon Peel Grated
1 Tsp Salt
1 Tsp Celery Salt
2 Cups Chicken Broth

-- Lemon Gravy --
2 Tbsp Butter
2 Tbsp Flour
Reserved broth
2 Egg Yolks -- Beaten
3/4 Cup Half And Half
2 Tbsp Lemon Juice
MEAT BALLS
Mix all but broth together. Bring broth to boil and shape meatballs and drop into broth. Simmer 6 min. Reserve broth for lemon gravy. Pour gravy over meatballs and garnish with parsley.
LEMON GRAVY
Melt butter add flour cook a minute. Add hot broth stirring until thickened. Beat egg yolk and cream. Add while stirring to hot sauce. Cook gently stirring 2 min. Add lemon juice.

Tangy Lamb Patties

1/8 Tsp Bay Leaf -- Crushed
1/8 Tsp Rosemary -- Crushed
1 Tsp Oil
1/2 Cup White Wine -- or Chicken Broth
Mix all but oil and wine. Shape into small patties. In a skillet over med. high heat cook patties in oil for 10 min. Add wine to pan and cook 5 min. more.
