For rosettes and timbales, you use what is basically
a pancake batter. It isthe same concept as funnel cakes (there are several
recipes for them on the Web here and there), too,
just more uniform than free-form funnel style patterns
(which are fun .. can make designs, letters, etc. w/funnel.

I will post the funnel cake recipe I've used and had
fun with. I just bought the set you have and haven't
used it yet. If you don't have the original instructions
and recipe(s?) that come with it, I'll type them up
for you. Let me know if that's what you meant, okay?

I'd also love to see what other variations people
have come up with for this but I put out a request
for funnel cake recipes and got no response (that I
know of, anyway). I think the idea is to look at
pancake variations and add things that are minced very
finely so they can stay on the iron. Extracts and
spices can vary them a lot to start with.

Here is the basic recipe I used for funnel cakes and
another to compare:

Funnel Cakes Servings: 6 1 Egg, beaten 2/3 c Milk 1 1/4 c Flour 2 tbs. Sugar 1 tsp. Baking powder 1/4 tsp. Salt Beat milk with egg. Blend dry ingredients and gradually add the milk mixture,beating constantly until batter is smooth. Holding your finger over bottom of afunnel having a 3/8 to 1/2 inch hole, fill funnel with batter. Holding funnel asnear surface of fat as possible, remove finger and drop batter into deep fatheated to 375 using a circular movement from center outward to form a spiralcake about 3" in diameter. Immediately replace finger on bottom of funnel andthen form other cakes (as many as will float uncrowded). Fry until cakes arepuffy and golden brown, turning once. Remove cakes with a slotted spoon toabsorbent paper to drain. Sift confectioners' sugar lightly over cakes or drizzlewith molasses and serve at once. 2 - 2-1/2 dozen cakes

Funnel Cakes1 1/4c. flour2T sugar1 t. soda3/4 t. Baking powder1/4 t. salt1 egg3/4 c. milkCombine dry ingredients. Beat egg and add milk. Add liquid to flour mixture and beat until smooth batter. Have hot oil ready for deep frying. Put 1/4 c. batter in funnel, blocking open end with finger. Hold over oil and let batter drizzle in oil, moving around in circular pattern. Repeat, making as may as will comfortably fit in fryer. Cook, turning over once until they are lightly browned. Drain on paper toweling, then sprinkle with cinnamon sugar or powdered sugar. ENJOY!!!!
