Shrimp and Crab Cakes:
1 pd raw shrimp,peeled and deveined (spot shrimp if avaiable
1 egg
1 cup heavy cream (!)
Salt and pepper to taste
1 pd flaked and cooked crab meat(Dungeness crab)
1/2 cup fine dry bread crumbs
1/4 cup finely minced red onion
1 tbls Dijon mustard
1/4 tsp hot red pepper sauce (Durkee)
1/2 cup canola oil for frying
In a food processor, puree the shrimp, egg, cream, salt and pepper.
Transfer the mixture to a medium bowl. Add the crabmeat, breadcrumbs,
onions, mustard and red pepper sauce. Blend well. Shape the mixture
into 2 inch patties, about 1/4 inch thick.
Pour enough oil into skillet to cover bottom of pan. Place enough
of the cakes into the skillet to fit comfortably without crowding.
Saute the cakes over medium high heat until one side is crisp and
golden,about 7 minutes.Turn and do the same.Drain on paper toweling.
Serve warm with your favorite dipping sauce-sweet, savory,or spicey!
