Drop 1 1/2 c. walnut halves in 2 c. boiling water & simmer for 10 min. Drain. Sift 2c. superfine
sugar, 1 t. salt, 1 t. nutmeg, 2 T. cinnamon, 2 t. ginger, 1/2 t. cloves 1 t. allspice & 2 t. orange peel-2-3 times to blend. Set aside. Beat 2 egg whites til frothy/ add 2 T. water & mix. Add walnuts, 1 c. pecan halves & 1/2 c. blanched almonds; stir to coat well w/ egg white mixture.
Drain. Make a shallow layer of the spiced sugar (about 1/2) in a jelly roll pan. Add nuts to the remaining sugar mixture and mix. Separate nuts and spread in a single layer over sugar in pan. Bake in 200 degree F. oven for 2 1/2 - 3 hours. Remove and while warm break into small pieces (about 2-3 nuts per piece.
This is my favorite confection at Xmas. Make sure the oven is not too hot. Enjoy!
