Hi, I've been making pizzelles for my family for years, but no one likes anise, so I had to come up with other flavors. I like to use almond emulsion or extract instead. My family likes these two also. These are very delicate.

Chocolate Pizzelles Makes about 3 doz

3 beaten eggs
1 c less 1 T sugar
3/4 c melted butter
1 1/2 c flour
3 T cocoa
1 t baking powder
2 t vanilla

Lemon Pizzelles: Using above recipe, leave out cocoa, use 3/4 c sugar, sub lemon ext for vanilla and add 1 T grated lemon peel
