Hi Patty, Here's a couple of ideas for you to look over. Have FUN, Joe BARBECUED TURKEY 4 1/2 lbs. turkey legs (6 sm. legs) 1 c. flour 1 tsp. salt 1/4 tsp. pepper 1/2 tsp. chili powder 6 tbsp. melted shortening 1 c. barbecue sauce **BARBECUE SAUCE: 1/3 c. vinegar 2/3 c. water 1 1/2 tbsp. prepared mustard 1/3 c. brown sugar 1/4 tsp. pepper 1 tsp. salt Pinch cayenne pepper 2 lemon slices 1 lg. onion, sliced 1/2 c. butter or margarine 2/3 c. catsup 1 1/2 tbsp. Worcestershire sauce Rinse turkey legs, drain, pat dry. Dredge with flour mixed with seasonings. Brown in hot fat in large skillet, or pour melted shortening over legs arranged in single layer in greased baking pan and bake at 350 degrees for 45 minutes or until well browned. Pour barbecue sauce over meat. Cover and simmer on top of range, or bake at 325 degrees for 1 to 2 hours or until tender, basting turkey frequently with sauce. Serve with fluffy hot rice. Makes 6 servings. Combine all ingredients. Simmer, uncovered, for 20 minutes. OVEN BARBECUED TURKEY LEGS 4 turkey legs or thighs (or 1/4 cut legs (2 1/2 - 3 lbs.) 1 c. all-purpose flour 1 tsp. salt plus 1/2 tsp. celery salt 1/4 tsp. pepper 1/4 tsp. chili powder 6 tbsp. cooking oil 1/2 c. each orange marmalade and bottled chili sauce (I substitute 1/2 c. chopped stewed tomatoes and 1/2 c. spaghetti sauce) 2 tbsp. red wine vinegar 1 tsp. Worcestershire sauce 1. Wash and dry poultry pieces. 2. Blend flour, salt, celery salt, pepper and chili powder. 3. Dredge turkey (or chicken) with this mixture. 4. Heat oil in heavy skillet. Brown poultry parts evenly on all sides. 5. Stir together marmalade, chili sauce, vinegar, Worcestershire sauce. 6. Put browned meat into shallow baking dish. Spoon chili mixture over evenly. (Can be made ahead to this point.) 7. Cover dish. Bake at 300 degrees for 1 to 1 1/2 hours or until meat is tender. Baste once or twice with the sauce during baking. Good served with hot fluffy rice and tossed salad. BAR-B-QUED TURKEY WINGS 3 or 4 turkey wings (legs may be used) 1 c. flour with salt and pepper 1 tbsp. oil 1/4 c. chopped onion 1 c. water 1/4 c. catsup 1/4 c. vinegar 1/4 c. honey or brown sugar 1/2 tsp. cinnamon Pinch of cloves Coat turkey with seasoned flour and brown in hot oil. Remove wings from pan and saute onions until glossy, add remaining ingredients and bring to a boil for 2 minutes. Return wings to sauce, cover and simmer for 2 hours or until tender. Remove bones and reheat. Serve with rice or noodles. May be refrigerated or frozen and reheated.
