Here's a rice recipe for you:

Spicy Rice

2 tablespoons olive oil
1 onion, chopped
2-3 cloves garlic, minced
1-2 jalapeno peppers, roasted, seeded, and chopped
1/4 teaspoon powdered ginger
2 1/3 cups water
1/4 teaspoon fine sea salt
1 cup brown rice
snipped fresh parsley
1/2 cup diced fresh pineapple, or canned pineapple tidbits

In glass batter bowl, or large "ugly pot", combine oil, chopped onion, and garlic. Microwave on high for 2 minutes. Add peppers, ginger, water, salt, and rice. Cover and microwave on high for 10 minutes, then on half power for 25
to 30 minutes, covered. It is done when most of the liquid has been absorbed. Let stand, covered, for 5 minutes and then toss in the parsley and fruit.
