SWEET CORN (ROASTED IN THE HUSK)
Use amount of sweet corn as desired. Gently pull back the husks, as you would peel a banana and remove the silks from each ear. Replace the husks and tie them in place with a strip of husk, heavy cord, or thin wire. Soak the corn in cold water up to 1 hour. Place the corn on the grill over hot, glowing coals. Turn the corn often, until the husks are steaming, about 10 to 15 minutes. Then husk and serve with butter and seasonings. When cooking the corn on the metal grill surface, allow 20 to 25 minutes and rotate the corn frequently. Final cooking time will depending on how hot the coals are and the distance of the grill surface from the coals.
CORN ROASTED IN THE HUSK
Soak ears of corn in salt water for 1/2 to 1 hour without disturbing the husks. Remove from water; shake off excess. Place on the grill, 4 or 5 inches above the coals (or the ears can be placed directly in the ashes of a moderate fire); turn occasionally. When husks have turned light brown on all sides, corn is ready. Pull back husks; the silk comes off with the husks. Serve with butter or margarine and salt.
