CANDY APPLES ON A STICK
1 tbsp. butter (margarine) 3/4 c. clear syrup (Karo) 1 tbsp. vanilla 10-12 apple sticks 3/4 c. sugar 1/2 c. cold water Red food coloring (optional)
Wash and dry apples; insert sticks. Mix all ingredients, except food coloring. Boil, stir constantly until mixture becomes brittle. Turn fire very low, add food color. Dip apples in candy and place on greased cookie sheet. Enough for 10-12 apples. CANDY APPLES 2 c. Domino sugar 1/2 c. light corn syrup 3/4 c. water 4 drops red coloring 2-3 drops oil of cinnamon 10-12 apples Combine sugar, syrup and water in top of double boiler, place over low heat and stir constantly until sugar is dissolved and boiling begins. "Keep crystals wiped from side of pan with fork wrapped in damp cheese cloth". Boil until syrup reaches 300 degrees. Remove from heat and plunge pan of syrup into pan of cold water to stop boiling, then put it back over hot water to prevent it from hardening. Stir in oil of cinnamon and food coloring. Put apples on candy stick. Dip into syrup hold upright and twirl slowly so syrup will cover entirely. Place on a well greased cookie sheet. CANDY APPLES 8 wooden ice cream bar sticks 1 c. water 1/2 c. light corn syrup 1/2 tsp. red food coloring 8 sm. Red Delicious apples 3 c. sugar 1/4 c. red hot candies Insert a wooden stick part way through the stem end of apples. Grease a large cookie sheet; set aside. In a 2-quart saucepan, combine remaining ingredients. Over medium heat, heat mixture to boiling without stirring. Boil, without stirring, until candy thermometer reads 290 degrees, or when a little of the mixture dropped into cool water separates into thin hard threads, about 20 minutes. Remove saucepan from heat. Tip saucepan, swirl each apple into mixture to coat. Quickly swirl apple over saucepan to allow any drips to fall back into the pan. Place apples on a cookie sheet to cool. Cool at least 1 hour before serving. Yield: 8 candy apples. RED CANDY APPLES 1 c. sugar 1/4 c. corn syrup 1/2 c. water 1/3 c. cinnamon 1/2 tsp. red coloring 6 apples 6 sticks Wash and dry apples. Cook 1 cup sugar, 1/4 cup corn syrup, and 1/2 cup water to 300 degrees or hard crack stage. Remove from burner and add 1/2 teaspoon red coloring and 1/3 teaspoon cinnamon. Cool slightly. Place apples on sticks and dip one at a time into syrup, twirling to remove excess syrup. Place on waxed paper.
