The commercial candy makers use a substitute that sets up like sugar in hard candys. It is Sorbitol or something similar described to me as being a protein substance. The commercial candy makers are keeping these recipes a close guarded secret. I wanted to make peanut brittle, and having made with this substance, one can hardly tell the difference from the real thing. Thank you so much. Don't tyoe tii much until your hand is much better.
