* Exported from MasterCook II * Monkey Bread Recipe By : Nursing School '64 Serving Size : 1 Preparation Time :0:00 Categories : Bread, Yeast/Sourdough Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup milk -- scalded 1/2 cup sugar 1/4 cup butter -- melted 1/2 teaspoon salt 1 package yeast 1/4 cup water 4 1/2 cups flour Proof yeast in 1/4 cup of warm water. In a large bowl mix the first four ingredients together, add proofed yeast. Stir flour into liquid mixture until it pulls away from sides of bowl. On a floured surface, knead til smooth and not too sticky. Return to bowl, cover and let rise til double. Punch down and let rest for 10 min. Melt 1/2 cup margarine and put in a small shallow bowl, in another shallow bowl mix 2 cups sugar and 1 teaspoon ground cinnamon. Make walnut sized rolls of the dough; roll each ball first in butter and then coat with sugar mixture. Place the coated balls of dough, staggered, in greased tube, pan. Let rise about 45 minutes.
