SHORTBREAD
2 1/2 c. all purpose flour pinch of salt 1 c. unsalted butter 1 c. confectioners sugar
Preheat oven to 325 degrees. Combine flour and salt in bowl. Beat butter and sugar in bowl until fluffy. On low speed, add dry ingredients. Knead dough, divide in 1/2. Place 1/2 in center of ungreased sheet. Sprinkle with flour and cover with wax paper. Roll into 8 1/4" circle, 1/4" thick Remove wax paper. Press inverted 8" round pan into dough. Trim. Put 2" circle in center. Divide outer ring into 8 equal wedges. Prick with fork. Bake 20-25 minutes. While hot, recut into wedges. Cool. Repeat with remaining dough. |
