MINCEMEAT DELIGHT
1 jar mincemeat 2 pkg. hot dogs
Cut hot dogs into bite-size pieces. Add hot dogs to mincemeat in crockpot. Simmer for a few hours until the hot dogs have absorbed the flavor.
MINCEMEAT COFFEE TWIRL
2/3 c. hot, scalded milk (1/3 c. if dry yeast) 1/4 c. shortening 3 tbsp. sugar 1 cake yeast or 1 pkg. dry yeast softened in 1/3 c. warm water 1 egg, unbeaten 2 tsp. grated lemon rind 1/2 tsp. cinnamon 2 1/2 to 2 3/4 c. all purpose flour 1 c. prepared mincemeat
FROSTING:
1/2 c. sifted powdered sugar 2-3 tsp. cream
In a mixing bowl, combine the scalded milk, shortening, sugar, and salt. Cool to lukewarm and then add the yeast and let stand for 5 minutes. Blend in the egg, lemon rind, and cinnamon. Gradually add the flour to form a stiff dough, beating well after each addition. Cover and let stand 15 minutes. Roll out dough on a well floured surface to a 15 x 10 inch rectangle. Spread 1/2 cup of the mincemeat in a strip down center third of dough. Fold one side of dough over filling and spread additional 1/2 cup of mincemeat. Fold opposite side to overlap and seal. Place on a greased baking sheet. Cut several gashes across top of dough with a sharp knife. Let rise in a warm place until light and double in size (45-60 minutes). Bake in a 350 degree oven for 25-30 minutes until golden brown. For the frosting, blend together the powdered sugar and cream until at a spreading consistency. Frost the cake while still warm.
MINCEMEAT CHEWS
3/4 c. shortening 1 c. brown sugar 1 egg 1/4 tsp. salt 1 1/2 c. brandied mincemeat 1 tsp. vanilla 1 1/2 c. flour 1 tsp. soda 1 tsp. ginger 1 c. nuts 3 c. quick cooking oats 1/2 c. molasses
Cream sugar and shortening. Beat in molasses, eggs, and vanilla. Sift together flour, soda, salt, ginger, and add to creamed mixture. Combine well. Add mincemeat and nuts. Drop by rounded teaspoons onto baking sheet. Bake 15 minutes at 375 degrees.
MINCEMEAT DATE BREAD
2 boxes Pillsbury quick date bread mix 1 box condensed mincemeat
Prepare mincemeat with water, as directed on box. Pour in colander to cool and drain. Grease bottoms of 2 loaf pans. Prepare one package of date bread mix as directed on box. Add 1/2 the drained mincemeat to batter. Pour in prepared pan. Repeat process for second loaf. Bake as directed on box, or until a toothpick comes out clean. Cool and wrap tightly. Slice with an electric knife and serve with a side dish of cream cheese frosting spread, if desired. This is a nice bread to share with friends.
MINCEMEAT CAKE
1 c. sugar 3 egg yolks 1 1/2 c. flour 1 c. drained mincemeat 1/2 c. shortening 1/2 c. sour milk 1 tsp. baking soda 1/2 tsp. vanilla
Cream together well the sugar and shortening, then add the egg; beat well. Add soda to sour milk and add alternately to the creamed mixture with the flour. Add vanilla. Fold in mincemeat. Bake at 350 degrees for 45 minutes. Put egg white icing on.
MINCEMEAT BRUNCH CAKE
1 1/2 c. sugar 1 c. butter, softened 1 1/2 tsp. vanilla 1 1/2 tsp. baking powder 1/2 tsp. grated orange peel 4 eggs 3 c. flour 2 c. mincemeat 2/3 c. chopped walnuts 1 c. powdered sugar 2 tbsp. orange juice
Beat together sugar and butter until creamy. Beat in vanilla, baking powder and orange peel. Add eggs, one at a time, beating well after each addition. Mix in flour. Spread 2/3 batter on a greased jelly roll pan 10 x 15 inch. Spread mincemeat on top of batter. Drop remaining batter onto mincemeat, making 15 dollops. Sprinkle chopped nuts over all. Bake in a 350 degree oven 35-40 minutes, or until tester comes out clean. Stir together powdered sugar and orange juice and drizzle over cake while still warm. Cut in squares and serve warm. May be mixed ahead and held, unbaked in refrigerator overnight, then baked an extra 10 minutes in the morning. Adapted from a recipe in Sunset magazine.
