Just read your request, and the responses you received. I have been making potato candy for about 32 years since I've been married. Got the recipe from my mother-in-law. She got it from an ex sister-in-law. This is how I was told; l small potato boiled with skin till tender, while still hot, mash add a dash of salt, about 1/2 tbsp butter, (my addition to this recipe is about 2 tbsp of cream cheese) anyway, start adding SIFTED powdered sugar until you get a still dough.. I then flatten this out and sprinkle saran wrap with powdered sugar and roll out the "candy" between two sheets..if it gets sticky just sprinkle more powdered sugar...roll fairly thin...remove top sheet of saran and spread with a thin layer of peanut butter (i always use Jif) and then starting with the long end of the paper roll it all like you would a jellyroll, pulling saran away as you go...when all rolled, leave in same paper and slide onto a cookie sheet and freeze.. in about an hour you can slice these and they are beautiful pinwheels..I make this every christmas, and it is so many people's favorites, I can't even tell you....you may have to make it a few time before you get the knack of it but it's worth it...also, regarding storage, during the christmas season, I just store it in the freezer between sheets of saran, and when i make up my cookie trays, i just pull the tin or tupperware out of the freezer.. also, if you've added enough powdered sugar, they won't "melt" or "weep" if you store them at room temperature...I think best refrigerated or frozen. make sure to use the saran wrap between layers though.. Hope you try this..I have never heard of the cinnamon though, but mine with the cream cheese added is much better than my mother-in-laws, I think, because it cuts the sweetness and adds a creamy taste.. good luck---hope you enjoy...
