If it is anything like regular cilantro, there are many uses for it. 1) Make a "pesto" with it. Take 2 c. of the leaves and stems and put it in the food processor with a couple of tsp. of garlic, some peanuts (about 1/4 c), maybe some ginger, salt and some oil. Puree and put in ice cube trays and freeze them. When you want a bit of taste in something pop one or two out and put it in and let it defrost. Also, you can take the paste and put it in a jar, cover with oil and refrigerate. As long as the paste remains covered with oil it will not go bad. 2) You can puree it by itself with just some oil and do the same things with it. 3) You can freeze them (wash the leaves and dry them really well first) on a baking sheet and when frozen put them in a ziploc bag. When you want the taste but don't care what they look like, take a few leaves out and use them. I hope this helps you out with all your cilantro.
