U.S. SENATE BEAN SOUP INGREDIENTS: 1 Lb Great Northern Beans. 1 1/2 Cup Cooked Ham (diced) 1 Med Onion (chopped) 2 Ribs Celery (chopped) 1/4 Cup Parsley (Chopped) 1/4 Tsp ea Garlic Powder and Nutmeg. 10 Cups Water. 3 Tbs Cooking Oil. Salt and Pepper to taste. INSTRUCTIONS: Rinse and sort the beans.
Place sorted beans into a large heavy soup pot, cover with warm water, bring to a boil. Reduce heat to a medium simmer. Meanwhile sautÈ the ham and onion in oil, add this to the beans. Let simmer for about 2 hours, add water as needed during cooking. After 2 hours cooking remove 1 1/2 cups of the beans and mash them. Add all remaining ingredients, including the mashed beans.
