BEET CAKE
1/2 c. cocoa 1 1/8 c. vegetable oil 1 tsp. vanilla 1 3/4 c. flour 1 1/2 c. sugar 1 1/2 tsp. baking soda 1/2 tsp. salt 3 eggs, beaten 1 1/4 c. mashed beets 1/3 c. chopped nuts
In large bowl, combine cocoa, oil and vanilla. Mix well. In another bowl, combine sugar, flour, baking soda and salt. Mix and add to cocoa mixture. Blend in eggs and beets. Beat 2 minutes at medium speed. Stir in nuts. Pour into 9 x 13-inch greased pan. Bake at 350 degrees for 25 to 30 minutes.
Frosting for Beet Cake: 1 stick margarine (room temperature) 2 c. powdered sugar 1 (8 oz.) pkg. cream cheese (room temperature) 1 tsp. vanilla Put ingredients in bowl and beat until smooth.
