BARBARA'S MUFFULETTAS

First prepare olive salad hours in advance (2 to 4).

1 pt. salad olives, broken and
finely chopped
2 carrots, finely chopped
4 celery stalks, finely
chopped
1 onion, finely chopped
3 cloves garlic, finely
chopped
1/2 tsp. oregano
1/4 tsp. Italian seasonings
1/4 c. olive oil
1/4 c. vinegar
1/3 c. grated Romano cheese
salt and pepper to taste
8 poppy seed or sesame seed
buns or muffuletta breads
(small)
1/2 lb. ham, sliced
1/2 lb. Swiss cheese, sliced
1/2 lb. salami, sliced
Mix olives, carrots, celery, onion, garlic, oregano,
Italian seasonings, olive oil, vinegar and Romano cheese. Mix
well. Refrigerate 2 to 4 hours or longer, covered. Salt and
pepper to taste.
Put olive salad on bun, 1 slice of ham, 1 slice of
cheese and 1 slice of salami. Wrap each in Saran Wrap and
refrigerate. Heat as needed in microwave oven for 40 minutes.
