Here it is: BLUSHING BAKED SALMON Remove the salmon from the refrigerator 15 minutes before baking. This dish can be served either warm or at room temperature, which Sheila Lukins prefers to chilled salmon. 6 salmon fillets (about 6 ounces each) 3 tablespoons lime juice 3 tablespoons honey 2 tablespoons olive oil Salt and freshly ground black pepper, to taste 6 fresh mint sprigs, for garnish 3 limes (halved), for garnish 1. Place the salmon fillets in a glass or ceramic dish to fit, skin-side down. Combine the next four ingredients and brush them over the salmon. Refrigerate, covered, for 30 minutes. 2. Meanwhile, preheat the oven to 450 degrees F. Bake the salmon for 15 minutes or until cooked through. (The salmon should flake easily when tested with a fork). Carefully remove the salmon to 6 dinner plates and garnish each fillet with a mint sprig on top and a lime half alongside. Serves 6. Per serving: 275 calories, 14g carbohydrates, 27g protein, 13g fat, 73mg cholesterol. Enjoy!
