Broccoli Casserole

1 pkg. chopped broccoli
1/2 c. water
1/2 c. chopped onion
1/2 c. chopped celery
1 can cream of celery soup
1/2 stick margarine
1 1/2 c. Minute rice
8 oz. jar Cheese Whiz

Combine everything (except rice and Cheese Whiz) in saucepan. Simmer 10 minutes. In another pan, mix 1 1/2 cups rice with 1 1/2 cups boiling water. Stir in Cheese Whiz. Mix all together and bake in casserole. Bake at 350 degrees for about 40 to 45 minutes. Makes 6 to 8 servings.


Spinach Pie

3 pkg. or 2 lb. fresh spinach (or 2 pkg. frozen, chopped)
1 onion, finely chopped
1/4 c. olive oil (or less)
1/4 c. grated Parmesan cheese
1/2 lb. feta cheese
1 tall container cottage cheese
3-4 eggs, slightly beaten
1/2 tsp. dill
1 box phyllo pastry
1/2 c. butter or margarine, melted
Salt & pepper to taste
Garlic salt to taste

Wash spinach, destem and dry. Chop coarsely. Saute onion in oil until golden color. Mix egg with crumbled feta cheese, cottage cheese, spices and Parmesan cheese. Add spinach and mix until well blended together. Line 11 x 14 x 2 inch pan with phyllo sheets. Note: For ease in handling pastry, make sure it's completely thawed. Brush melted butter between each layer (according to directions). Use about 8-10 sheets. Top with spinach mixture. Repeat procedure with another 8-10 pastry sheets. Sprinkle top layer with water, punch a few holes to let steam escape. Bake at 350 degrees for approximately 45 minutes or until golden brown.


Our Favorite Cheesecake

2 (8 oz.) pkgs. cream cheese, soft
3 eggs
1 (15 oz.) can sweetened condensed milk
1 (10") graham cracker crust

TOPPING:
1 c. sour cream
3 tbsp. sugar
1/2 c. drained crushed pineapple

Cream cheese, blend in eggs and add milk. Pour into crust and bake at 300 degrees for 25 minutes. Remove and spread on topping. Bake 10 minutes more. Cool and chill for several hours.


Sweet and Sour Kielbasa

1 (10 oz.) jar apricot preserves
1 c. Kraft barbecue sauce
1 lb. Kielbasa, cut in quarters
1 (8 1/2 oz.) can pineapple chunks, drained
1 c. green pepper chunks
1 c. mushrooms, cut in half

Fry Kielbasa pieces a few minutes. Mix preserves and sauce. Add remaining ingredients. Mix lightly. Simmer for 1/2 hour.


Cherry Delight Pie

1 (8 oz.) pkg. cream cheese
1/2 c. powdered sugar
1 pkg. Dream Whip
1/2 c. sugar
1 graham cracker crust
1 can cherry pie filling

Beat softened cream cheese until smooth and fluffy; add powdered sugar. Prepare Dream Whip according to package directions; add sugar. Fold into cream cheese; pour into graham cracker crust. Pour cherry pie filling over all. Refrigerate for 24 hours or longer. Yield: 8 servings.


Cherry Cheese Cake

1 pkg. cake mix (white, 18.5 oz.)
1/3 c. butter
3 lg. eggs
3/4 c. sugar
2 tsp. vanilla
2 pkg. cream cheese (8 oz. each)
2 c. sour cream
1 tbsp. vanilla
1/4 c. sugar
1 can cherries (21 oz.)

Beat cake mix, butter and 1 egg until crumbly. Press lightly in ungreased 13 x 9 x 2 inch pan. Beat together 2 eggs, 3/4 cup sugar, 2 teaspoons vanilla and cream cheese until smooth. Spread over crumb mixture. Bake at 350 degrees for 20 minutes. Mix sour cream, 1/4 cup sugar and remaining 1 tablespoon of vanilla. Spread over cooled cake. Add cherries on top. Cover and put in ice box for 8 hours until it sets up. Serves 16-18 people.

Sweet Cream Biscuits

2 c. Bisquick baking mix
2/3 c. whipping cream
2 tbsp. sugar

Preheat oven to 450 degrees. Mix all ingredients together well until a sticky dough forms. Drop by tablespoon onto a greased cookie sheet. Bake until golden, about 10-12 minutes on the center rack of the oven. These biscuits can be used to make strawberry short cakes.
