What a neat idea, Sue!
Here is a Tried and True Roast Chicken that visits my kitchen about once a week!

Roast Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 hen (Perdue chicken works well)
fresh sage
fresh thyme
olive oil
McCormick Mesquite Seasoned salt

Clean, wash and dry bird. Place herbs in cavity. Spinkle with seasoned salt. Rub olive oil all over bird. Bake at 500* for 15 minutes in roaster. Bake 35-45 minutes more at 400* Let sit 10 minutes before serving.

NOTES : I have used lemon pepper seasoning, herb seasoning and a mix of what I have had on hand.
